Hey, though it may seem weird to do it for this class, here it is.The idea is that they were originally a herbalist in the city, then moved out into the forest to study. He knows how to extract poison from plants and their uses. Human, probably variant. Either prodigy or ritual caster. Scimitar and shield or light crossbow. How'd it sound?
But why is here doing all this? Why did he leave civilization to study plants? What are his motives? Curiosity? attempting to discover something? Has Zuggtmoy reached out for him?

I mean, cool idea, but it is more his fascination with plants and poison. As their are little plants in the city, he left to find these things in their natural form. However, what you said could make a cool warlock

FYI, if you're interested, Fellozial's Ultimate Guide to Poison (at the DMsGuild) includes a druid subclass called Circle of Venom along with detailed guidelines for harvesting poisons from both monsters and the environment (i.e. plants). Here's an excerpt from the druid subclass description in the guide:
Druids of the Circle of Venom have devoted themselves fully to a careful study of nature's poisons: plant toxins, animal venoms, noxious spores, and other such baneful weapons that the natural world produces to defend itself or to subdue prey. By studying these poisons and those creatures that produce them, Venom Druids hope to learn from them so as to emulate, harness, and control these forces and to better ward against them should the need arise.
The deeper an understanding such druids develop, the more it colors their druidic abilities. The greatest Venom Druids can eventually call upon this knowledge when using their Wild Shape feature, letting them transform into all manner of venomous shapes no other druid could master; such specialization does, however, prevent mastering a wider array of the more basic, nonvenomous shapes.

He could potentially go Druid / Warlock multiclass. Start as a Druid, but when the desire to wipe out humanity Comes forth, an ancient power latches on as patron. Green or Night Hag seems to the most likely, or perhaps a Fomorian or even the Queen of Air and Darkness. The DM could work out how the progression would work between the two.

Just to let you all know, as much as I love this content, my character is more about nature and extracting the properties of plants to help or hinder, rather than wipe out or blatantly ruin people and civilisation.

The only thing that makes it but if is the whole extracting poisons since the only usage for it is to kill something. Still the concept is interesting
