Because of the wording of the Giant's Might feature, the answer would be yes it does crit.
"one of your attacks with a weapon or an unarmed strike can deal an extra 1d6 damage to a target ON A HIT."
That last bit is where it talks about it being applied on a hit, thus making it part of the attack damage and all attack damage die are doubled on critical hits.
They most certainly are, and it's glorious. :) I hope you have as much fun playing your Rune Knight as I've had with mine(just hit Level 7 and am switching from the UA to the TCoE version).
If I have three attacks and I don't crit with the first one, can I choose no to add the 1d6 and see if I get one on my next attacks?
Yes, the wording just says "once on each of your turns", it doesn't specify "the first successful attack" or anything similar. If you want to bet on critting with your next attack and risk missing the chance to apply it at all that turn, you're welcome to.

So I will be playing a new character, Rune Knight and I have a question.
Does Giant's Might crit? I mean, when we roll a crit and do giant's might on this hit, does it also do not 1dX but 2dX?

Yes, it’s crits same as Sneak Attack, Smite, Hunters Mark and other additional damage dice.
