I am planning to play as an Eladrin Way of Shadow Monk and was thinking of ideas of what to do with them. At 4th level, I was thinking of getting the eldritch adept feat (so that I can see in darkness). Then 2 levels of Fighter for Unarmed fighting style and action surge. I was also contemplating 1 level of rogue for sneak attack( I think it would go well with shadow step). So is this worth trying or should I just stick with straight monk?
To pick up Eldritch Adept you specifically need to have either the Spellcasting or Pact Magic feature. Unfortunately just being able to cast spells isnt enough.
What you could do instead is pick up the Blind Fighting style if you dip into fighter.

My experience as a monk has shown me that getting the Monk stuff sooner is better than later. Fighter, for unarmed fighting style and action surge would be a small boost for a short time, BUT delays the magical hands and increased martial arts dice by 2 levels. Add in rogue, for.....well, nothing, because sneak attack requires a finesse or ranged weapon, and you've just gone a path already delaying Monk levels to boost hand to hand, so......
My advice, given what you've said, would be to maybe take the feat for Devil's Sight, which would not only theme in but help the character a bit. Intending to use it to see through darkness (I assume you mean the darkness you can cast as a Shadow Monk) you need to remember it's 2 ki per casting and you get 1 ki per Monk level, so getting as many Monk levels as possible is the best method to get something beneficial from the mix. The ASI's are pure gold to Monks, being as MAD as they are, but foregoing one might not be too bad, since the ability to fight normally within a darkness you create is a nice perk.

Eldritch Adept sounds good but as soon as you cast darkness those that can not see through it will run out of it. A warlock can stand in darkness firing eldritch blasts at advantage but you need to get into melee with the bad guys so it probably won't do as much as you hope.
If you can't see in natural darkness you have the option of casting darkvision, though the cost of 2 ki is high but it lasts for 8 hours so wo won't need to refresh it after a short rest. You might also be able to find a goggles of the night or something. By the time you get to about level 7, a cost of 2 ki per day, or a second level spell slot for the wizard is relatively much lower so even without the goggles you should be good to go.
I agree with Falwith that you want to get your monk stuff as soon as you can. The other thing with monks is they are MAD, you are better off taking ASIs in Dex and Wis, and maybe even con before taking a feat.
