I have a monk character I'm working on. Although they aren't there yet, I want to choose the Way of the Astral Self subclass when I reach level 3. After I do this, should I multiclass to fighter for Second Wind/Unarmed Fighting Style, or would that be detrimental to my character and/or not worth the effort? I have never played a monk before, so I'm pretty inexperienced as far as this kind of thing goes.

If you were going to MC fighter I would probably wait until after Monk 5 for extra attack and stunning strike.
Are you playing the 2014 monk or are you waiting until the 2024 PHB comes out?
I don’t think second wind or the unarmed fighting style will do much for you. But that’s my opinion. The few points of damage you would gain isn’t worth the delay in extra attack or Ki points. Especially if you’re using spear or quarterstaff (both do 1d8 with versatile property) for the Attack action.
If you are sticking with the 2014 version you could still take a lv4 Feat (below) to fix that issue as Fighter really doesn't give a Monk much. in 2024 Grappler feat will do more for you!

You learn one Fighting Style option of your choice from the fighter class.
If you still want to multiclass, may I recommend a one level dip in Barbarian for Rage and a better Unarmoured Defence (if you don't want to focus on Wisdom)

Being that they are going Astral Self they probably want to focus on Wis for the arms.
I would instead take a level of Druid or at the very least take Magic Initiate: Druid so you can learn Shillelegh. That way you still have a way to do damage with WIS when your astral arms aren't out and can focus on that attribute and not lean as much into DEX.
