Can I attack twice with a quarterstaff, then use my bonus action and a focus point and get two more FOB attacks? Giving me a total of 4 attacks?
Yes, you can. Making tons of attacks every turn is kind of the Monk class's core "thing".
It's also worth noting that as of level 5, your unarmed attacks deal the same damage as a basic quarterstaff used two-handed (1d8 + your Dexterity modifier). Unless you have a fancy magic quarterstaff that has other benefits, you don't really need it at that point.
If I have Elemental Attunement, a characteristic is: Reach. When you make an Unarmed Strike, your reach is 10 feet greater than normal, as elemental energy extends from you.
Can I hit 2 different opponents, one at 5 feet with "magical" quarter staff and at 10 feet with an FOB a different opponent?

Sure. When you're making multiple attacks in the same turn, they can be against the same enemy or different ones; it's your choice each time you make an attack.
Also worth noting that Elemental Attunement increases your Reach with unarmed attacks by 10 feet, not to 10 feet, so in your example you can actually hit someone 15 feet away with your Flurry of Blows. (Your Reach with unarmed strikes is normally 5 feet, increasing it by 10 gets you 15 feet.)
Yes. In fact, you can distribute your attacks between as many different foes as you have attacks, as long as they are within reach when you make the attack. Note that while you can move between your Attack-action Attacks, you cannot, under normal circumstances, move between your Flurry of Blows attacks.
