If I was making a character based on the Jedi do you think this class and subclass work closest? Robes are armor, longsword (eventually sun blade) as a monk weapon.l, some ki (force) powers? Maybe need a ring of telekinesis to simulate most Jedi force powers but what y'all think?
I believe Arcane Tricksters are close to Jedi. As you can use mage hand to manipulate objects similar to Jedi Force Power, mage armor gives you a great AC without Armor, and spells like suggestion and friends is similar to jedi mind tricks. If you wanted to multiclass then two levels of wizard war magic or enchantment will give you a further Jedi vibe. Two levels warlock allows Eldritch blast with the invocation that pushes people similar to a force push, but you may go MAD trying to get this.
As they do....watch Obi Wan or Darth Maul battles.
Sure, I'm not going to argue that Mace Windu or other Jedi/Sith aren't capable of some Jedi fu. I guess my point was when I think of what are the most flavorful aspects of a Jedi Knight, being good at unarmed strikes would not be high on the list.
The Kensei is not a bad choice as far as Jedi go. Being able to deflect missiles and send them back with your lightsaber is pretty iconic. And Jedi are known for being pretty mobile in battle, especially in the jumping department. Furthermore, Jedi are almost universally unarmored and following a specific philosophy is a recurring trope with both Jedi and monks.
That being said, you get no spells at all, which is problematic for a Jedi. You might remedy this by taking Magic Initiate for Mage Hand, Friends and then one of the spells Jump, Thunderwave, or Witch Bolt depending on what kind of Jedi you're going for.
Not going to lie, though: monks are not some super powerful class, and taking feats instead of focusing on raising your ability scores does nothing to remedy the situation. This goes double when the feat in question demands you to pay attention to a fourth ability score on top of your Dexterity, Wisdom and Constitution - in this case either Intelligence or Charisma(Wizard/Sorcerer). Therefore I would not take this feat until you at least have your Sun Blade and have a decent Dexterity. So I'd wait until at least level 8 and preferably 12. Roleplay-wise I would play it as you becoming a Jedi through training instead of being one from the beginning.
In the magic department, do also note the possibility of picking a race that gets spells as class features. A cantrip and maybe a few spells won't remove the necessity of taking magic enhancing features later on, but it's a good head start to your Jedi career at least. In particular, the high elf might be worth looking into for many of their flavorful features.

If you are allowed to use UA then the Psychic Warrior is the closest.
In this D&D Beyond video they call the Psychic Warrior the "Darth Vader subclass".
The thing about monk is even if you are Kensei, you will still be punching/kicking some percentage of the time.
Of the published classes I think Eldritch Knight might be the closest. Mage Hand would be a must have for this build.
