I’m a level 6 fire Genasi monk- I’m going for a hit and run fighter who is fire/radiant based attacks. He uses a boomerang(reflavored as a chakram for range attacks). He is modeled after Axel from Kingdom Hearts, if that helps with what I’m going for.
I want him to be able to fight at range, but also get in closer to crank out damage.
With Elemental I was going Fire Fangs, and the burning hands attack so far. It’s seems element you can burn all you ki into one large attack if you desire which is awesome flavor but then your spent.
Sun soul seems to be a blaster that puts out steady damage and manages ki much better, but doesn’t hit that hard.
Your assessment is pretty accurate. The elemental is still very much a melee character with elemental attacks (obviously). Sun Soul kind of encourages you to stay away from melee range and operate more as a caster.
Seeing as how you want the best of both worlds, I don't know which would be better for you. They both can fight long and close range, but one subclass encourages one more than the other. The Sun Soul has cool flavor, but the mechanics itself sort of contradict the Monk class itself by making you lean on long range attacks. Elemental is also amazing flavor and is still a melee subclass, but one of the weaker ones the Monk provides and has little to offer in terms of attacks from a distance. But it your asking just between these two, I'd personally say the Elemental.
