So I am playing a re-skinned Aasimar as a hound archon. wha would be a good find steed option for him that would be fun/make sense thematically. DM is open to steed options and will even allow us to summon medium steeds and use them as animal companions as opposed to mounts. Any suggestions?
These were great suggestions. I was going to go with a bull, but then came to find our DM scrapped the chose a different campaign setting. So now I am scrapping the race and going with a different build entirely. I posted a new thread to get peoples opinions. I do love the Aasimar stats and perhaps Ill keep that race and skin as a scarecrow (was cursed by a hag or something to fit the setting better).

In the entry for archons it says: “The two most common archon mounts are winged bulls and winged lions.”
So you could go warhorse and reskin as a bull or lion, then when you get to find greater steed, it sprouts wings and you use the Pegasus stat block.
Here are the stats for the winged bull and lion/archon mounts: Winged Bull (5e) - Dungeons and Dragons Wiki (dnd-wiki.org) and Winged Lion (5e) - Dungeons and Dragons Wiki (dnd-wiki.org). Or google stats for bull or lion and add wings/flight. :)
