Ok, so I have this character that I probably won't get the chance to play, like all my other characters because I honestly have no time or group of people to play dnd with but I still like to create them. So, anyway, I have this character that's basically a Grim Reaper and he works for my Lady Death and he takes his job seriously. That is until he gets a boyfriend and attached to the party... I was thinking that he would be a Oathbreaker Paladin, right? My reasoning is that he doesn't want to loose them, he hasn't had that connection or that type of bond before. He is also long living, not exactly immortal but will probably outlive them, and with the way my death system works, where the closest Reaper will take the soul, he would probably be the one to take their soul when they die. He was never afraid of death before but now he is scared it will come from his found family... I'm willing to change things if necessary.
To be an oathbreaker, you first need an oath. What oath did you see him as having originally?
Also, worth noting, Oathbreaker is considered an optional subclass that only happens with DM permission. And it really tends to work poorly with most adventuring parties. Their aura, for example, buffs all undead and fiends, even if they are enemies. So for a story, they can be cool, but in play, they rarely work.

Ask your DM. It's impossible for anyone else to answer that question without knowing the setting, current oath or why what you have described would cause the character to break that oath.
