I think it technically might, but I could be wrong. the spell description says on your next weapon attack, and griffin attacks are classified as melee weapon attacks, so it seems to meet the criteria. Though there is a whole thing with melee weapon attack vs attack with a melee weapon not being the same thing, and I’m a little unclear on how to parse that distinction. However, the bigger problem in that scenario is that if you are on your mount, the only actions it can take are dash, dodge or disengage, so the griffin wouldn’t be able to attack, anyway. Edit: assuming you’re controlling it. If not, it may be able to smite, but it would be up to the DM what or even if it attacks.
