I will do a 5/15 Sorcerer/Ranger build, and im confused with how ill so my multiclass spells, someone please explain, And will all spells cap at 5th lvl bcos of the ranger
You'll know spells based on your level in each class, so you'll know 4 Ranger spells, which can be level 1 or 2, and you'll know 6 Sorcerer cantrips and 14 sorcerer spells, which can be up to level 8 maximum.
Your spells per day is worked out at Sorcerer levels (15) + Ranger levels (5) divided by 2, rounding down (2), so you will be able to cast spells as if you were a level 17 caster.

This means you'll have one level 9 slot, BUT you will only know level 8 spells at maximum, and will therefore only be able to use the level 9 slot if you upcast a lower level spell.

I'm assuming the previous reply was incorrect about the class split and that you meant 5 levels of Sorcerer and 15 levels of Ranger, since that's how you wrote it.
Chapter 6 of the PHB & Basic Rules covers this. You pick your spells for each class as if you were only that class. So you would pick your Sorcerer spells as if you were a level 5 Sorcerer(5 cantrips, 6 leveled spells no higher than 3rd-level), and your Ranger spells as if you were a level 15 Ranger(9 leveled spells, no higher than 4th-level). For your spell slots, you would add your 5 levels of Sorcerer to one half(rounded down) of your Ranger levels, so 5 + 7 = 12 as your level on the Multiclass Spellcaster table. That would give you 4 1st-level, 3 2nd-level, 3 3rd-level, 3 4th-level, 2 5th-level and 1 6th-level when it comes to your spell slots. Yes, this means you'd have spell slots of a higher-level than any of the spells you can learn, but you can still use those slots for any of your spells, especially ones that scale at higher levels like Fireball, Cure Wounds, etc. The other thing to remember is that the stat you use for your spell attacks and spell save DC depends on which class you know the spell from. So if you're casting a spell you learned from the Sorcerer list, it keys off your Charisma score, and spells you learned off the Ranger list key off Wisdom. So while it's certainly not impossible to multiclass in two classes that use different spellcasting stats, it does make things more complicated. Thankfully, your D&D Beyond character sheet should keep track of that math for you.

Right you are, completely misread it, thanks for fixing it.
Level up to 5 like a normal sorcerer. Once you take ranger levels your slots will follow the multi-class chart. When you get ranger levels you learn ranger spells like a new character + what you established for sorcerer. Treat spell casting as separate except for metamagic and total slots.
My question is what are you hoping for by multi-classing this way. I could see a couple of synergies as possible paths but you have to decide if the additional complexities are worth the benefits. There may be simpler paths to the same goal.
since ranger already likes several stats (MAD) rangers usually dump charisma. Still your build concept could work and might work well with the right subclasses.
Generally when doing a ranger - sorceror build you want to dump strength, and focus on Dex, charisma and con with the bare minimum 13/14 in wisdom then go ranger 5/6 to get the two attacks and L6 benefits then go the rest of the way as a sorceror. Rangers transition from martials to casters in Tier 2 anyway and frankly sorcerors are better casters than rangers. If you go that way take a look at Dravaal’s description. You would also then have 15 sorcery points to work with instead of 5 and 3 metamagics to work with instead of 2. Done this way you only have a 4 ranger spells but the better ones (hunters mark, zephyr strike, goodberry, pass w/o trace, silence) don’t call for a save so a low wisdom is not a problem. What I typically do is go ranger 1, sorceror 1 to get the sorceror cantrips as my missile weapons then focus on melee as a ranger going 2-5 before starting back on the sorceror levels.

EDIT: As pointed out below I misread the split.
