So i was wondering i play a ranger and just got to level 7 and want to go monk sub class since my AC will be 20 since we did manual rolls and i got two max rolls. My main question here is can i still use my long bow? I was reading monks can't use long bows so i was wondering how that all works
You can most definitely use your longbow, as the weapons you can use come from the proficiencies you have, and multiclassing does not take away any proficiency, if anything it adds more. Keep into consideration, though, that Unarmored defense only works when you are not wearing armor. As I understand it you have both DEX and WIS of at least 18, so you would have a total AC of 18 (20 if you have 20 in both DEX and WIS) going Monk.
The synergy between Monk and Ranger is probably not the best, especially if you want to keep on attacking from range, but if you like the concept, go for it :)

With a 15 AC from dex, 2 from studded leather you have an AC of 17. If as Lek points out you decide that monk might make a sub optimal choice, and your desperate to increase your ac you can go fighter, gain a second fighting style, pick +1 ac when wearing armour, and cheekily get second wind. at 9th level and your 8th in ranger if your still desperate you could choose moderately armoured feat, step up to halfplate for 15 ac, +3 dex and +1 fs. (19) OR heavy armoured and just take platemail 18+1 fs. (19)
If you are mostly ranged, your ac shouldnt need to be that heavily invested in compared to sharpshooter feat, however that choice is up to you :).
Thanks for the info guys!!! much appreciated! Yeah i've got 20 dex and 20 wisdom right now so i'dhave 20 AC if i went much and took off my armor. I thought it'd be hilarious and make my DM cry a little inside. haha. Also the extra movement and possible melee if i have to and being an extra tankish class just in case was a decent idea.
Going Kensei Monk (probably best for your Ranger) requires 3 levels, which is okay, but you won't have much in the way of Ki point resources. Low level Monks are not very versatile b/c of that limited resource unless your DM predictably gives you 10-minute short rests every two encounters or so. And doing so will also delay your spell selection improvement. So unless you feel like you are done taking levels in Ranger and just want to go Monk from this point forward and/or doing this for narrative purposes, it's not the optimal choice.

Monk Path of Kensei allows Long Bow as a Monk weapon that works with Monk abilities.
