ROGUES GET TO HALF DAMAGE INFITIE AMOUNT OF TIMES PER DAY
Uncanny Dodge requires a reaction, so while a rogue might be able to do it "infinite" times per day, they can only do it once per round
And to add to that, if they use their reaction to Uncanny Dodge they can't use their reaction for opportunity attacks which means that they can't get a second sneak attack. Which adds to the point that Rogue are, in fact, limited in their abilities and resources.
I agree it's kinda striking that Rogue is the only class without any x times pr. long rest ability. I think they simply forgot. The designers propably had a number of ideas - like Hide in Plain Sight - that they couldn't balance properly, and so they eventually forgot all about it, and now we have one class that sticks out like a sore thumb.
It's propably fine, though.

Blanket disclaimer: I only ever state opinion. But I can sound terribly dogmatic - so if you feel I'm trying to tell you what to think, I'm really not, I swear. I'm telling you what I think, that's all.

But they don’t stick out though. This is the first time I’ve heard anyone mention it and I’ve been here a while.

Which is why I said it's propably fine, right? It's weird that they stand out as the one class that doesn't have that type of ressource - but on the other hand, everyone seems ok with it.

I think you're looking at it the entirely wrong way. Rogues have resources to manage and it's basic things that every other class "gets to take advantage of".
Rogue is the only class that has to be very mindful of how they use bonus attacks and how when to use reactions. Sure you can argue all classes do this but for the most part it's less crucial for them because half of the "problem" of playing a rogue is making everything count. If you aren't dual wielding weapons than you only get one attack and if you miss, you're done. If you are dual wielding than that means outside of magical augmentations the highest you're going to have is 1 d6, sure you'll have it twice assuming they both hit, but that's nothing compared to some of the other classes.
Even considering that angle though why does Rogue necessarily need to have limitation to there existing kit. While other classes have other resources to manage they are often more powerful than the rogue from the start (and just because Rogues are constantly played doesn't mean they are OP or underpowered it just means they are popular). So sure other classes have more to manage but again you would have to give the Rogue more from the start if you wanted to make them manage there existing kit because they aren't that strong.
No Rogue player is going to stand up and say, "Hey guys! There needs to be a limit on how many times I can Sneak Attack! and while youre at it, take a look at that Cunning Action thing, it"S too good right now."

It's not even that outlandish. Rogue is just on one end of a spectrum, where the classes and class features fall all over the place.
It was once the case that Wizards were the opposite end of that spectrum: having absolutely nothing class-related that wasn't limited in use. Nowadays they have cantrips though.

One wonders what the justification for limiting the number of times you could do either one would be. It's not like it really makes sense that you could only make a limited number of precise attacks per day.

Advanced Dungeons & Dragons thieves were kind of limited-use. They could only Backstab if they were behind an enemy while hiding, and you couldn't really hide in combat so you generally got off your one Backstab at the beginning of combat and then were stuck shooting people with a shortbow or the like for the rest of the fight.

Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

Ask the Battle Master Fighter, who literally can only make a limited number of Precision Attacks per short or long rest.

It's not weird, it's a feature of the Rogue class.
Canto alla vita
alla sua bellezza
ad ogni sua ferita
ogni sua carezza!
I sing to life and to its tragic beauty
To pain and to strife, but all that dances through me
The rise and the fall, I've lived through it all!
