I have a half elf rogue that is a dancer. What would be a good subclass to purchase for her. I chose rogue because it has best dexterity and she fights with knives. Any tips and suggestions would help. Thank you.
You could go for something exotic like a Soulknife that uses psionic energy. Also has knives made of psionic energy. They get the ability to boost their skill checks using psionic energy, which could work well with a character relying on skills.
Scout is a great option for mobility, as a very nimble and agile subclass can work/fit well with a dancing theme. Elegantly dancing around in combat with superior speed and mobility.
I'd ask what ELSE do you want to do? Nearly any subclass can fit with just the slightest bit of work. Do you want to be more of a ranger, or really like the concept of EVEN MOAR MOVEMENT? Pick Scout. Want more mechanical justification for a high CHA? Go Swashbuckler - which is also great if your party has issues ensuring you have a flanking buddy. Want to be as sure as possible, as early as possible you make critical skill checks? Then there is no better option than Soulknife, which will even let you create knives merely because you want them really bad.
Basically, there isn't really a dancing or knife based Rogue subclass in the game unless you look at third party stuff. There is no equivalent of Pathfinder First Edition's Knife Master, for perhaps the best example I can think of.
Depends on how much you want to pull from the idea of Rogues as manipulators vs. from the Fight Gud with Knife idea. A dancer means high CHA. But you want to balance that with high DEX. While Arcane Tricksters are fun, they also want a slight investment in INT, which is a little hard to do well if you already have a lot of points put into DEX and CHA. My suggestion would be to either go with Soul Knife or multi-class by starting with Swashbuckler to take advantage of your high CHA, then multi-class Fighter for extra HD and Thrown Weapon Fighting style.

Arcane Trickster could supply your own special effects in minor illusion, silent image, etc.
Assassin would work well in a Black Widow sort of way
Swashbuckler works well with charisma and could be really fun to explain your movement via dance.
Thief could make you a cat burglar.
