When you hit let say with your 2 weapons then use fancy foot work to move out, how far away are you moving? 5ft? And then, if the enemy tries to attack you he has to move forward, does this trigger an attack of opportunity for you?
Attack twice, move out and wait, attack of opportunity then the ennemies turn, back to you with 2 attacks then move out etc..
depends on the tactical situation, and where the safest place to move is. I will want to be able to move back /into/ combat next round (should the monster not come to me) with the minimum amount of movement used as possible. Also, no, moving into threatened areas do not provoke OA (unless you have the sentinel feat).

Sentinel doesn’t give you an opportunity attack when an opponent moves into your melee range either. It allows you an opportunity attack if they leave your range even if they use a disengage action. It also allows you an attack if someone in your melee range attacks anybody other than you.
The point of Fancy Footwork is that you avoid attacks of opportunity, not make them.
Attack, move away, dart around the battlefield, attack multiple foes, heal a party member, hide, open a lock, pick a pocket, whatever - all without any risk of attack.
