Hey! I need some advice on how to best multiclass as it'll be my first time trying it. So far I have a level 5 half-elf Wild Magic sorcerer with the following stats:
The Sorcerer is a class that multiclasses pretty well. Their main limitation is a lack of versatility, and given that classes are fairly front-loaded, you get a lot of bang for your buck with just a few (or even one) level(s) of another class. Given your stat spread, there are a few popular options:
The Sorlock, consisting of 2-3 levels of Warlock with the rest in Sorcerer. The main draw here is Eldritch Blast, which you can upgrade with Invocations and then use in conjunction with the Quicken Spell Metamagic for damage that's on par with an action-surging Fighter. Eldritch Blast also scales with character level instead of class level, which means multiclassing doesn't hurt as much as it otherwise might. A two-level dip is popular because that's all you need for Eldritch Blast and two Invocations, but I'm partial to three levels, which nets you the Pact Boon and sends your spell slots to second level. One thing to keep in mind here is that Pact Magic and Spellcasting are separate entities, so while you can use Warlock spell slots to cast Sorcerer spells and vice versa, they don't mix like multiclassing two Spellcasters. You can use your Warlock spell slots to refresh your Sorcery Points when you short rest, but you won't have higher level spell slots that you would otherwise have. If you're looking for more durability, you can also choose the Hexblade Patron to get medium armor and shield proficiencies.
Bard 1-3 / Sorcerer X is also very popular. Even just 1 level grants light armor, 4 more spells known (some of which pair very well with Metamagic), 2 more cantrips, full spellcasting progression (preserving your spell slots but not higher level spells known), a skill, and Inspiration, the pool of which is based on your Charisma modifier, so it scales well. It's probably my favorite Sorcerer multiclass because you get so much for a single level.
There's also Paladin 2 / Sorcerer X, but that's more for melee characters. You'd get medium armor, smites, more spells (from a prepared rather than known list, which is nice), and some nifty Paladin abilities. However, this does effectively turn you into a melee character without the health of one, so use it warily.
Any of these options can be very effective, but keep in mind that they have opportunity cost. Still, it's tough to make a truly useless character.
Ill assume that you character already made and played and so what you mentioned is locked. Fighter and hexblade warlock both give you light/medium/shield proficiency.
if you wear shield+breastplate you get 18 AC which probably huge then what you used toor 19 AC with half plate shield if you dont mine the stealth disadvantage. You also get prof in simple martial weapons although probably less intresting.
Warlock probaly the best choice if you want the strongest combination although an action surge fighter that can cast 2 spell with option to twin spell it if single target amuse me to no end.
I'd definitely look at hexblade warlock for my MC if I was looking to be less squishy. You can pick up the spell shield from hexblade, which frees up a precious sorc slot. You get medium armor and shields. You get Eldritch Blast. Your warlock spells will recharge on a short rest, so you should always be able to use shield, or you can convert those slots to spell points if you need to for meta magic. Hex is a good pick up as well.

need help and or tips on this build. Blood hunter lv7 (order of the lycan) thinking on dipping 3 lvls in shadow magic sorcerer for the utility of not only blinding others but in later lvl's of blood hunter gets fater and due to his order he gets fater in darkness & dim light. 1st lvl gets 120ft of darkvision and if you hit 0 hp make cha+damage save to hit 1 hp instead, casting darkness without using a spell slot at 3rd lvl. blood hunter makes me hard to kill normaly since all weapon damage none silvered or magic is halved. Am I missing some down side to this build idea. id only get to lvl 2 spell's and my cha mod is +2 but thats all I see.
I dont really feel like you're getting much out of the 3 levels of shadow sorc dip. A bit of extra speed is pretty meh for 3 levels (imo). Also, as someone who really loves some drow, I can't think of /any/ time that 120 ft darkvision's ever helped me out. I think you'd be better served just staying single classed.

Story wise Warlock (Pact of the Fiend); Paladin Oath of Conquest; Cleric Grave Domain and a Druid (he still isn't sure of the Circle as yet - Possibly Moon); a Monk of The Way of the Four Elements are possible multiclass options as that would be explainable story wise:
As my character's best friend is a Tainted Knight (An Eldritch Knight with a Warlock Pact of Fiend and spell list instead of the normal Eldritch Knight spells) and they grew up together and they are linked in the story.
The Cleric is the Garrison Training Commander in the story and my character was sent for basic training as part of the militia conscription order for able bodied men & women, in the town.
The Paladin is relatively new in town but our characters have been on adventures and missions together as part of the backstory.
The Druid is/was the town brewmaster, also a frequent inspiration / mentor for my character and the protector of the local forest.
The Monk was a frequent traveler on the ship in search of enlightenment on the sea and on other continents.
There was a suggestion for going 1 to 3 levels in Bard to gain all the Bard nice to haves and increase survivability and improve general effectiveness in and out of combat.
My character role within the party is generally the nuke the skirmisher and a loveable pest...
I am toying with the idea and the possible personal story of the character and the impacts on the group.
Also if somebody could mechanically breakdown the benefits and the drawbacks of the everything please, I thank you kindly...

IF you were to MC, of your list, I would only consider Warlock or Paladin. I'd probably chose to go warlock before paladin. I would not consider any non-charisma based class because you don't want to be dependent on multiple attributes. Additionally, warlock is a great blaster and synergizes very well with sorcerer.
That said, as someone who's multi-classed a sorcerer before, I wouldn't recommend it until at least level 5, if at all. I MC'd early and while I liked the character very much, I feel like it was a mistake.

I've got a lvl 3 human/reborn draconic bloodline sorcerer. For backstory purposes, I'm going into warlock (undead patron) for fourth level. Suggestions after that?

Its really hard also not to take a second level, as fireball / action surge / fireball sounds cool as hell, but honestly just that single level really buffs the sorcerer class.

You cannot cast more than 1 levelled spell in a single turn so unfortunately action surge fireball would not work.
I would actually suggest a 1 level dip into Cleric. You get the heavy armour and shields (AC18 | AC20 with plate) and if you pick up the Order domain you can use the Voice of Authority feature to give someone like a rogue another attack as a reaction so they can sneak attack twice in one round. Conversely, the Life domain is good if you want extra healing and a load of good utility spells and buffs.
I just built a lvl 5 Divine Soul | LvL 1 Order Domain Cleric MC to replace my current character if they die / retire. They use chain mail and a shield + their focus (AC18). I picked up Metamagic Adept at LvL 4 so I have access to twinned, quicked and empowered spell as well as distant spell as well as another 2 sorcerer points bringing my total to 7. The intention for the build is to open with Bless which will trigger VoA + a quickened cantrip like firebolt. Then cast Spiritual Weapon for extra dmg etc. I can get up to some real shenanigans by twinning spells like Guiding Bolt and Haste, or by using distant spell on things like Spare the Dying, Cure Wounds or even Inflict Wounds. Of course, an empowered Fireball is pretty cool too. Thanks to my CHA+5 I could reroll 5 of the 8 D6 if needed.

You have misunderstood the rules of spellcasting a little bit. The only instance where the spell you cast with your Action is limited/restricted is if you have already cast another spell with your Bonus Action. Once you have cast a spell with your Bonus Actions you can only cast cantrips with your Action. So Action Surge lets you cast 2 leveled spells as long as you have not cast a spell with your Bonus Action. The reverse is also true, once you have cast a leveled spell with your Action you can no longer cast a spell with your Bonus Action.
Fireball + Fireball is one the the most godly spell combos in the game because you know the saying "Fireball solves everything". Therefore 2 Fireballs solves everything twice as well :D
Casting a second leveled spell is covered in a number of other threads so I’ll leave that alone. For a sorceror adding one level of fighter does help put a tin can around the squishy. If you do it first it also provides a bunch more HP for survivability. It also allows you to get the L19 ASI only losing the L20 capstone. You may get more if you do a 2 level starting dip into ranger. You loose the capstone and ASI but you get the HP, the armor, the martial weapon use and 2 extra spells (one option there is absorb elements and zephyr strike), depending on what type of sorceror you want. Draconic is not the best as your going with the armor from ranger not the dragon scales, wild and storm sorcery may be the best fits there. Either with a variant human or a gem Dragonborn ranger. And either the outlander or folk hero backgrounds to help out with useful skills. This is one case where I wouldn’t take stealth as a ranger skill since once you start blasting stealth pretty much goes out the window.

Cleric multi class is useful with weapon and armor proficiency and healing stuff.
i have similar stats with my Sorc (Divine) / Warlock (Celestial)(Tome)

Take tough and warcaster as feats. If you pick your spells right you're as dangerous as anyone.

I think its been said that you can cast two leveled spells using action surge. You just cant do three (i.e. casting a bonus action spell).
