I think the new class features in Tasha allow you to change out a cantrip when you hit an ASI level so you could take it at a low level and then change it if you notice you no longer need it. In our last campaign we used the old UA rules which allowed sorcerers to change their spells after every long rest and I dumped it because I wasn't using it.
I had it with my first ever sorcerer and used to do damage once in a fight at Level 3. I mostly relied on firebolt because sorcerers really need to be in the back as far away from melee as possible. You can use it to light a big bonfire obviously which has some utility but you can also use prestidigitation to light a fire and then heap lots of wood on it. I'm not sure I would waste a sorcery point on casting it with subtle.
I really think it depends on what type of sorcerer you envision being, what you think you might run into and what the other party members have available to them.
One thing not mentioned in this thread is the fact that you have to be able to see the location of the bonfire. I took it hoping I could use it as a light source but then read the spell. Its still useful but not for to create light in regular darkness. (I took magic initiate because I wanted find familiar)
if you are using this, take a Var Human and start with the Elemental Adept (Fire) feat. That will get rid of all those pesky resistances. A Dragonblood fire sorcerer is a force of nature with that feat.

Create bonfire is good in my opinion, but at higher levels it can be hard not to light the bonfire with something more powerful.
