From a mechanical perspective they have a boost to charisma and constitution which are important stats in the game, theme wise they can be an interesting storm sorcerers since they live by the see. They also get dope water spells, speaking to aquatic beings and can withstand deep sea pressure which is nice.

Born under the watch of something from the furthest corners of the far realms.... It knows all.... it sees all... and it asks: "What is it that you want to see?"... and my answer is... ALL"
Triton is one of my fav races and I think they are generally under-represented. Solid stat bonuses for Sorcerer as well as generally useful spellcasting and resistance bonuses. All in all, a very solid choice for Sorcerer I would argue. Storm would be thematic but potentially also Dragon from a Dragon Turtle with some DM flexibility or Wild Magic from the elemental plane of water. Lots of fun choices.
Any time an unfathomably powerful entity sweeps in and offers godlike rewards in return for just a few teensy favors, it’s a scam. Unless it’s me. I’d never lie to you, reader dearest.

Bronze, Gold, Green, and Black dragons are all amphibious, as well. While Black and Green dragons typically prefer fresh water, both Bronze and Gold dragons regularly make lairs in undersea caverns. For UA content (that will probably be coming out in Tasha's Cauldron), the Giant bloodline with ties to Storm Giants would also be fitting.

Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
Tritons are a really solid race for Sorcerers. I've played a Triton Cosmic Sorcerer (I homebrewed the Subclass), and it was a blast. There is a surprising amount of Space-y spells in dnd 5e, which is pretty fun. This was essentially my spell list: (We were into Epic Levels, and the DM allowed me to get more spells known than normal, and I got an expanded spell list - he was a really generous DM, but, we were epic levels, so...)
Spell List:
Cantrips: Ray of Frost, Fire Bolt, Light, Dancing Lights
How does a triton sorcerer sound
It sounds like a lot of fun! But I love the water so it’s a PC that I’d play.

There's no reason why it's not a solid pick.

Built an Underwater homebrew sub-class Sorcerer for the fun of it:
Aquatic Shock Sorcerer.
