I have managed to create a character with a normal range on eldritch blast of 600 ft, occasionally boosting it up to 1200 ft.
I did this through the Eldritch Spear Invocation, the Spell Sniper Feat, and Distant Spell Metamagic. (with more empowerment via Seeking Spell Metamagic and the Agonizing Blast Invocation)
What I am wondering, is what are some possible uses for this ridiculous range?
I think the first hurdle will be convincing your DM to start encounters at that range. You’re looking at almost a quarter-mile, and quite a few rounds passing where the rest of your party and the enemies stand there ineffectually. I guess a longbow technically has a 600 foot range, if people are at disadvantage. But moving 60 feet a round still takes most enemies 10 rounds before they get there.
If I were your DM, sure, I’d put an encounter like that in once just to let you have a moment to shine. But as it comes at the expense of anyone else doing anything, I doubt I’d do it more than once.
Basically, if your adventure isn't long range because of setup (naval, spelljammer, open outdoors with good visibility) that type of range is almost certainly never to be used. You can remind your DM of your incredible range, but there are consequences.
For example you might attack from 1200 yds and kill a guard, but now they know you are coming and while the party approaches the enemy now has multiple rounds of prep time. Outside of naval/spelljammer I have rarely been in encounters that it would have been beneficial to have a 300+ range. 90+% of encounters not naval/spelljammer happen within the 120 ft of Eldritch Blast.
If you are playing on actual maps, there aren't even maps big enough to cover 1200 yds.

Ship to ship combat is probably the best use for super long range. So naval campaign or spelljammer.
If you eventually grab repelling blast you can push people off boats as well.
