But there appears to be no way to "assign" this property to your chosen weapon?
Clicking on the weapon name should bring up a dropdown box that has a place to toggle Hex Weapon. I’m on a tablet; it might be slightly different on a desktop but it’s there.

Nope, nothing there. The character is only 1st level but this is something that should be available at 1st.
Oh I know why now, it's a greatsword and I can't do that to a two-handed weapon at 1st.
It's frankly kind of stupid that they limit it that way when they give Hexblade proficiency with all martial weapons at 1st, and you can do it once you hit 3rd and take Pact of the Blade.
The Hex Warrior ability of the Hexblade says:
