When Warlock : Undead reach level6, they grant Subclass Feature called Grave Touch

At 6th level, your patron’s powers have a profound effect on your body and magic. You don’t need to eat, drink, or breathe.
In addition, once during each of your turns, when you hit a creature with an attack and roll damage against the creature, you can replace the damage type with necrotic damage. While you are using your Form of Dread, you can roll one additional damage die when determining the necrotic damage the target takes.
So I have a question, does it work with Hex? (Hex Damage is Necrotic so i want to know does it work together or not)
Even if it works why? You get one additional damage die, unless you are attacking with a dagger the damage from the base attack will be equal to or more than the hex damage. Its not one per damage source done in an attack, its just one. Pick the one with the biggest die, likely eldritch blast.

This is the answer I'd go with, it doesn't specify that it is limited to the weapon/spell damage die that was used in the attack but it's kind of irrelevant anyways since anything but a d4 weapon (such as a dagger) is going to add more damage than an extra roll on Hex anyway. RAI, I believe it should be limited to the weapon/spell that was used for the attack roll.

I'm not sure exactly what you mean by "work with Hex".
Are you asking if the extra necrotic damage from this feature stacks with the extra necrotic damage from Hex? If so, the answer is yes, it does.
If you're asking whether this feature allows you to roll an extra damage die for the bonus damage from Hex, then the answer is no, it doesn't.

Grave Touch has nothing to do with Hex and does not affect its damage.
