From my reading I would have to say no. Your copy is basically a construct you create so it has no pact with your patron and by extension no class features. From the spell description it just looks like you and has half your hit points, it doesn't have a class or any equipment that isn't given to it.
I think RAW yes, all it can't do is regain expended spell slots. So it could create your pact "ring" with a short rest. I could see a GM call being that this would destroy your "ring" as it is your ring being made by a copy of you and creating a new one destroys the old one. Once it is created assuming the DM does not have it destroy your it could use it, daily as this is not a spell slot.

If I would cast Simulacrum on myself would I get my bottle of respite for the Simulacrum too as technically it's a class feature?
