Once I choose a school of magic, am I locked out of future spells from other schools? Like, is there some school-exclusive spells that I won't be able to learn. Or do all spells become available no matter what school you end up picking?
Like, I've just reached L2 and picked Enchantment, but later on, would Maze still become available for me to learn (Because that spell sounds awesome fun).
There is no such restriction on the spells. Choosing a school of magic, the only consequence on the spells is that it is easier to copy the spells from that school. That aside, you can learn every spell.
There are no school restrictions in 5e, so your wizard can learn any spell on the wizard's spell list.
The only thing it impacts is learning new spells from spell scrolls or spell books - you can spend half the time and gold per spell level to learn Enchantment spells. So, instead of spending 50gp and 2 hours per spell level of the spell you're trying to copy, you only have to spend 25gp and 1 hour per spell level for an enchantment spell.
You still learn any 2 spells of any school at level up as normal.
Right now I am in a campaign that has very little social interaction among the characters (except my wee gnome yellin' "Forward, meatshields!") or chance to pick other spells to add to the spell book.
I chose Evocation for the Sculpt Spells feature.
Bottom line, I agree that the choice of schools doesn't limit you; just keep in mind that some features of your choice make spells of that school more impactful.
"Schools" are just the name for the Wizard subclasses. You get to choose your school when you reach 2nd level in the Wizard class.

There were previous editions, such as 2e, where such was the case. It is not true in 5e.
I would, however, note the many examples where some spells are not excluded from your use, but function better in the hands of certain specialists. Minor Illusion, Animate Dead, etc. are examples.
