I'm trying to make a Castlevaniaesque character (Lex Eisenpolth). I wanted him to be part cleric 1 barbarian 2 because I think that would get me my axe wielding, whiplashing, boomerang throwing, fiend slaying powerhouse who has strong religious beliefs (You can just tell it reeks of Castlevania). Does anyone have any ideas/tips/etc. of what I should do?
I do not know about Castlevania but, You do not have to be a cleric to have strong religious beliefs. Clerics are those whom a God has bestowed magical powers, plenty of very devout people have no such powers.
A barb / cleric is very MAD, I would tend to go one way or the other, you can be a barb and rollplay your faith, your rage is a righteous anger etc. If you want magical powers plenty of cleric domains have proficiency in martial weapons, war domain might fit best (though it is not the most powerful domain if that is an issue). Another option would be paladin, maybe vengeance.
If you do stick with barb/cleric put your racial ability in str instead of dex, getting dex from 12 to 13 does nothing, but having +3 str will help your attacks . At level 4 get the con to 16 either with a half feat or also getting wis to 14.
Even a single level of cleric means you have to have at least 13 wis, which will hit affect you dex, con or str that you need as a barb. (Unless you rolled really well for stats). 2 levels of cleric will also lower your abilities further at levell 4 as you won't get your first asi until level 6. You will also be getting your other barb features late.
You could take magic initiate for a bit of spellcasting (and pick spells that do not rely on wis) but even then you need to recognise the is sub optimal as you are missing out on either an asi or a level 1 feat more suited to a barb (eg great weapon master)
If you want an effective character you want to go single class cleric and barb do not multiclass well.

You didn't choose the Primal Path for this character ?????..... You kidding me ???
If you choose the Battlerager path it allows you using the Wisdom as the main ability to cast spells, which it fits better for multiclassing into Cleric.or Druid.

Im testing which class would be better in a combat scenario because a lot of the campaigns I do have a good amount of combat. So far, I think I like cleric more because of the spellcasting).

Thanks for the advice. Now I can fine tune him better for battle.
Alternatively, you could be a full Barbarian and chose the Acolyte Background for the religious aspect.
When I said a barb and roll play your faith no problem with also adding acolyte rotating proficiency in religion as a racial or background feature
