I wouldn't assume that they've "dropped it completely". There are a million old-style Cleric subclasses, they can't do them all at once, and this one is pretty strong as is and likely doesn't need much in the way of updating. I've been using it on a 2024 Cleric for a while and I haven't run into any significant issues.
The Twilight Cleric had historically some troubles with balancing. I assume that it takes a bit longer to figure out how to keep the theme and feeling of the domain, but make it more balanced
How are you dealing with the late level spells (3 instead of 1 of the 2014) and the 3 feat instead of 5?
Unfortunately I can't speak directly to your first question, as this character started at level 7 (I was joining a campaign that was already in progress) so I never experienced those first two levels of not having a subclass. But I think that's more of a general issue with the Cleric class rather than anything specific to this subclass.
I don't quite understand the second part — 2024 Clerics get the same number of feats as 2014 Clerics, and that isn't affected by which subclass you choose.
How are you dealing with the late level spells (3 instead of 1 of the 2014) and the 3 feat instead of 5?
I had a player start from 1 as a twilight cleric with 24 rules. They just get all the stuff at level 3 instead of 1. It really wasn’t an issue. Levels 1 and 2 take, what 3 sessions? Maybe 4? It resolves itself quickly. I’m also unclear by what 3 feat instead of 5 means.

Subclasses don’t grant any feats in either version of the rules.
Feats are granted by the Cleric class at levels 4, 8, 12, 16, and 19 in both versions.
All classes get ASI/Feats at these levels. Only Fighters and Rogues get extra feats in their class progression - Fighters at levels 6 and 14, Rogues at level 10.
As for waiting until level 3 to get your subclass, it's not really an issue. The Divine Order feature in the base class lets you start off as a martial or caster based on your choices (Martial Weapons and Heavy Armor or a bonus cantrip and a bonus to your Arcana and Religion checks) instead of getting this choice from your subclass, so you can start your build right away. At level 3 you will get your subclass spells and features, which will not take long at all to reach. Plus, getting these features can be a nice role playing moment with your deity granting you new powers.

For cleric Features between the 14 and 24 version the only different in subclasses was: - Armor proficiency and others was moved from the the domain subclass to the Main cleric Class in Divine Order at 1st-> you chose instead of being forced. - The same for potent Spellcasting/Divine Strike that was move to the Main Class in the feature Blessed Strikes (at 7th and 14th)
The rest of the cleric features you get at the expected levels, for twilight:
at3rd: Domain spells, Eyes of the Night, Vigiland Blessing, Channel divinity (anything at or before 3rd lvl basically). at 6th: Step of the Night At 17th Twilight Shroud
Why have they dropped it completely? I see new subclasses every time in the UA but no sight of it...
I understand that Tasha's stuff is playable and adaptable for the 2024 Version but it think they need to be revisited anyway...
