Nope. At least not RAW. A holy symbol has to follow the rules for holy symbols. It can be only the things listed in its definition. There are ways to use a weapon as a focus (such as certain class/subclass abilities and magic items), but without those a holy symbol can be worn or on a shield according to RAW.
RAW, it cannot be on a weapon. There would not be much purpose in allowing it since Clerics/Paladins already get the ability to have it on a shield, and 9 times out of 10 the only reason we care about holy symbols is because we want to use a shield (1/10 dual-wield related); it is irrelevant when using a 2-hander or dueling.
Homebrew, I see no reason why your DM couldn't simply reskin a Ruby of the War Mage to function as a holy symbol.
