Really? Have you tried creating a new character from the standard setting and using the Guild Crafter background? It automatically asigns the language to gnomish, which is mentioned in the new OneDnD rule suggestions.

I've just made a character using the Guild Artisan background (there isn't a Guild Crafter background so I assume that's what you mean). It doesn't assign a language, you have the standard selection.
Alternatively, could you be using a homebrew background?
If I cannot make a 2014 rules only character the character builder than the whole app here has become effectively useless to me and I'll simply cancel my subscription and go back to making things the old way. I literally just tried to make a paladin for a 2014 rules only campaign with some of the older sourcebooks I have access to, and it was a complete disaster. I know I will be making that character by paper now.... and if this silliness continues why would I bother paying for my subsciption. Even if I planned to switch to 2024, it does not mean that I would always play only by 2024 rules.... and need to access 2014 only content when making characters for other campaign or continuing my 2014 only campaigns. There are enough differences in bonus, proficency, background, and progression between the editions that you can not simply add 2014 content to 2024 and have it work. You do literally need "2014 character or 2024 character" choice before anything else is selected.
Recently discovered when creating a character that they have implemented the new ”OneDnD” rules regarding backgrounds among other things.
Not a big proponent of the new railroaded style of rules that OneDnD seems to be.
My question is then if it is possible to change my premium account settings so I only use 5e original?
D&D Beyond does not support unearthed arcana, including the 2024 core rules revisions, and such none of the rules on D&D Beyond have been changed.
