I'm sure this isn't a new idea but has anyone floated the possibility of being able to add bonus spells to classes that wouldn't otherwise have them? For instance, giving a fighter the ability to cast Animal Friendship as a flavor ability?

This is best managed as either a homebrew feat, awarded by the DM outside of standard progression, or perhaps a magic item.
You could also homebrew a variation of the subclass to add extra spells.
