I'm not sure if this was intentional or merely an oversight, but Elemental Evil Player's Companion is not listed with the other sources. Obviously, the character options are there, but as near as I can tell the text is not. Perhaps the decision was made because EEPC is solely character options, and that it was a lot of effort for not a lot of gain. Even in the context of using it for consolodating information for Adventurer's League (which is how I discovered it) has limited value being that most of it is republished elsewhere, since I think the Gensai is the only race not reprinted elsewhere, but I figured I'd bring it up if it was an oversight.
Yes. It’s really only useful in one particular instance, which is being able to overview it for AL’s PHB+1 rule, which I only came across because as I was diving into the sourcebooks to determine AL legality for making pre-generated characters for new players, which I was picking the Earth Genasi for a fighter (I’m making one PHB only and one with a race from other books for every class), and I wanted to see if there was enough that was in the EEPC to make the lack of options viable (especially if they would choose to go Eldritch Knight). Obviously it would be easier to have the source in its whole to be able to review, but it’s a very simple workaround.
That being said, I imagine that it would be a lot more work than is worth for such a narrow purpose. D&D Beyond is a huge project that continues to grow at a break-neck pace, and slowing down progress for other more useful services is counterproductive, but I’d also hate to let it go uninformed if that was a mere oversight. It’s satisfying to know that it was a conscious decision, which would’ve plagued me if I had not at least checked to see its purposefulness.
My question then becomes, is there any other 5e supplementals that were also added but we can't tell because they're not listed? I know at one point I had been keeping up with supplementals from Wizards and there were things like the artificer and additional add-ons...are we to assume that's all just been added to the backend?
For clarity - Unearthed Arcana articles, since 1st Jan 2018, have been added to D&D Beyond*
All Unearthed Arcana content is clearly labelled as such (Artificer class) and can be enabled/disabled from the Character Builder by using the "playtest" toggle under character options.
* There are some UA articles that haven't been added, as they are in early form or would take significant development, such as the sidekicks UA.

As you mentioned, it's just character options - there's no additional content there that makes it worth reading as a source book.

Unearthed Arcana is always added 'to the backend' in the sense that it's merged into existing entries. There's no UA source.
