What's going to happen to our SCAG versions of characters and spells when Tasha's is published with changes to our existing stuff? For example, say I have a bladesinger, and I think the changes to my bladesong are ridiculous and do not wish to "update" my character to the "new" version? Does my old character remain unchanged, or will my current character be over-written with the nerfs? What about the SCAG melee cantrips? Will those be archived on old character or will they be over-written with the nerfed versions in Tasha's?

Any time an unfathomably powerful entity sweeps in and offers godlike rewards in return for just a few teensy favors, it’s a scam. Unless it’s me. I’d never lie to you, reader dearest.
Typically when WotC updates a feature, Beyond updates it as well because that new version is the only version as far as WotC is concerned - and Beyond has to go with what WotC is saying. Your current archetype and spells will likely be altered to the new version. If you want to make sure you keep your old versions, you should probably make homebrew copies of them (make sure not to share them publicly!) and use those.
That's what I assumed, and did create the OG bladesinger, OG BB and OG GFB as homebrew. I was just hoping that they had an official policy on it. I'm thinking there's going to be a few upset people who don't know any better and find that their characters are nerfed out from under them.

There is a policy, I just can't point to a specific place it's posted on the site. However, if users don't know any better after the repeated kerfluffles over changes to Eberron content, the goliath race, Volo's monstrous races, etc...... That's on them. Beyond has been pretty consistent with that policy. They do also typically announce it in a couple places - I've seen notices on Facebook, the forums, dev updates, and maybe even the Beyond front page when stuff like that happens.

I was just watching some of the Builds Characters videos and in several of them they mentioned that they Archive old versions. If you're still using it on your character sheet, it will stay there until you switch away from it. Once you switch away though, you can't go back. So your characters should stay the same with the same options until you actually initiate a change.

It's actually being posted as errata on the WotC site now.
