So I was trying to test out making a character for some reason, none of my source books seemed to be available when it came to picking a subclass. I've done everything I can think of that I see showing up in the answers for other people with similar problems but so far I haven't had any luck.
First, thank you for going through most of the troubleshooting steps yourself. You'd be surprised how many people don't!
So your third screenshot looks normal. You have all 14 classes (12 base + Artificer + CR Blood Hunter).
If you don't know already, you can only pick a subclass at certain levels. For most classes, its level 3, but some get it at level 2 or 1.
For example, I created a test character by going to the "2. Class" tab in the character builder on a fresh level 1 character and selecting the Druid class. Once you have the class added, you can begin to see the class features in that same tab. I can't pick the character's subclass yet because I'm not high enough level. If I adjust the character's level to level 2, I suddenly get an option to pick the subclass.
Try making a test character and see if the above works for you. If it doesn't please write back here with what you do see.
You were indeed correct. In hindsight I should have thought about this and I feel foolish. Thank you though for taking the time to help, it is very much appreciated!

I have all of the source options ticked https://imgur.com/ZS7IBiK
My entitlements are synced https://imgur.com/q8fpSQO
But none of my classes have subclass options https://imgur.com/erCo58i
And I'm pretty sure I got the "full version" of the sourcebooks https://imgur.com/Hcqj5ng
So any help would be appreciated. Thank you =)
