a while ago I could pick other subclasses (without having purchased anything) but now thief is the only option, which really sucks
It's never been possible to use subclasses from paid content without purchasing it or having access to it through content sharing. If you had access to other subclasses before, and you don't see them now, it's likely for one of two reasons:
You had access to them through content sharing in a campaign you were in, and the character you're making now is not in that campaign.
You had purchased some 2014/5e content that included subclasses, but now you're using the 2024/5.5e version of the class (in which case all your old content is still available if you choose the old version of the class instead)

If you haven't purchased anything, the subclasses were likely being shared with you. D&D Beyond hasn't changed what content is and is not free
