This morning I went to create a new character. After some experimenting, I'm missing several subclasses from Tasha's in the character creation:
Cleric (Order)
Bard (Eloquence)
Druid (Spores)
Paladin (Glory)
I haven't yet had the opportunity to see if any spells or magic items, etc., are missing yet, or if I'm missing any content from other books as well, but based on other threads, I wouldn't be surprised if that's the case.
I do own the content, my entitlements are in sync, and the content is missing on both mobile and desktop.
Do you have the Magic the Gathering toggle enabled? All of those subclasses were introduced in Magic the Gathering setting books and so you need to have the toggle enabled to use them.
Just tried it with the MtG toggle enabled and the options were still missing.
Also, my understanding is, since those character options were added to "core D&D" via Tasha's, the MtG toggle would no longer need to be enabled for them to be available (same with the Artificer and Eberron, for example). Do I have that wrong?
All of the subclasses presented in Tasha's Cauldron of Everything no longer require you to configure any source toggles in order to see them.
Of course, that doesn't help @sdomnibus because it appears to be entirely broken now. 😜
@sdomnibus - my current workaround is just to create a homebrew copy of the subclass (Collections > Create Subclass). For example, create a Bard subclass based on the College of Eloquence. Since I own the TCoE content on DDB, that option shows up in the list of options when creating a homebrew subclass. Change nothing. Save the homebrew subclass. Once you've done that, you can use the subclass by enabling homebrew content on your character. The nice thing is that it works now, but you can easily revert back to the official TCoE subclass once WoTC fixes this bug.
I am also experiencing this problem! I can select circle of stars no problem but no circle of spores. I had that subclass on a separate character so it’s quite upsetting.

The toggle was still required last I heard.
It's a very poor decision, but it's the one they made. (Or were forced into by their backend system design.)

Yes, it's not great, but at least there's an easy workaround (or see my post just above).
