I and two of the other people in my campaign are having the same issue: It seems like the sheets are forcing saves to notes and inventory between every single keystroke, and not allowing new input until it's done saving. is this issue site-side, or client side?
Yeah I've been having a problem putting anything but 1 letter at a time. So I've been writing stuff in Google docs and copy and pasting. but super annoying issue. It's happening on each computer that i've tried.
Right-click in the field you are editing. Then select inspect to see what is creating the problem. I checked using several different browsers (Chrome, Brave, Firefox): they are using deprecated features and some fields have no label or are used incorrectly.

So wouldn't that need to be fixed by site devs? Instead of every single user having to put a bandaid on the problem every time we open a character sheet?

Correct. I didn't say it was a fix, merely showing the source of the problem. Now you all know it's not you.

also just ran into this problem it's really weird....
additionally I have some charactersheets in underdark mode where the text stays black and becomes unreadable

This applies to all sections under NOTES.
I believe notes on the mobile app still work if you're wondering
I've been having that same issue, too. I can only assume it's being caused by the same, or similar, reasons, to the stuff with typing
It's working now for me so hopefully that means they fixed it permanently
