So I'm playing as a wizard with a sage background and want to take some cantrips and a lvl 1 spell from the druid spells list but somehow I cannot change the spell list. It is by default on wizard and cannot change it even if I delete all my wizard lvls.

If you're talking about the Magic Initiate feat that you get from the Sage background, you do not get to choose which class list the spells come from. Each background that provides that feat as an Origin Feat has a class list specified. Sage gets Wizard, Guide gets Druid, Acolyte gets Cleric. This is specified in the description of each background in the Player's Handbook.
If you acquire the feat through some other means, then you get to choose which class list the spells come from.
See if your DM/GM will permit a custom background, or allow legacy backgrounds. Folk Hero doesn't exist in 5e 2024, so if you take it, you can customize it to match Sage, but with a Magic Initiate: Druid feat.
(As an aside, similarly, I also have an idea for a Wizard who has Druidcraft as a cantrip to reflect his family history of farming and his history as a gardener before he became a Wizard's apprentice.)
