So for example, I created a Warden - and I added the starting armor of Leather - but the game on D&D Beyond believes he's not Proficient with the armor (so things like Stealth, Acrobatics, etc, that require DEX) are all at Disadvantage.
I have been trying to mess with the create a Custom FEAT to create the custom proficiency that is needed since D&D Beyond hasn't fixed the reported issue yet - and so far, not been able to figure out how to create a custom FEAT that, I would hope, allow me to fix this at least for now (until the day, should it ever, get fixed officially by D&D Beyond).
Instead of a feat, I’d recommend clicking inside your character’s Proficiencies & Training box and then manually adding proficiency for that armor in the sidebar.
If you really want a feat, it would need modifiers for each individual LOTR armor. Type: Proficiency, Subtype: Leather Corslet, for example. (Bear in mind that homebrew edits can also take up to 15 minutes to appear on your sheet.)

However - when the character has a Leather Corslet - which is Light armor - all of their DEX proficiencies (Stealth, Acrobatics, etc) all suddenly appear as Disadvantage with a note that they're wearing armor they're not proficient in. :(

That Light Armor category is where the issue is, so your workaround can't rely on that category. Hence the solution is to give the character proficiency with Light Corselts specifically, either manually on the sheet or by using a modifier as described above.

Ah, to give it specifically did the trick. So if they change to a different light armor, I would have to change it again, I assume?

The issue is that the armor category proficiencies (i.e. Light Armor) don't recognize the LOTR-exclusive armor (Leather Shirt, Leather Corselt, and Scale Armor). If the character switched to the Leather Shirt, the same issue would happen, but not if they switch to D&D's Leather Armor.
So you could either add those armor-specific proficiencies as they're needed, add them all at once, or group them together in a feat.
