After My Party and I did the intro to StormWreck Isle, we decided we wanted to continue that adventure. So I purchased the Digital Version of this Adventure. Now when I go to my Campaigns and Create a new Campaign (Pre-Built), I only see the option for Into To StormWreck.
Can anyone assist with this? What am I doing wrong here?
Only three premade campaigns exist. You can either keep using your existing campaign (and change the title and description as desired), or create a blank one and give it whatever name and description you like.

I have the same situation, and the response from spamandtuna isn't clear to me (I'm a newbie to the digital dnd sphere). I purchase Dragons of Stormwreck Isle and would like to (and thought I could) use it as a campaign. But it's not an option. Am I supposed to use intro to stormwreck isle?
A campaign on D&D Beyond is 99% just a way to group your characters together. Any campaign can be used for any adventure book.
All a premade campaign does is add a pre-written name, description, and notes to that campaign page. If none of those three premade campaigns have what you want, you can just create your own campaign page and write whatever you prefer instead.
