So although I like the half Pact Magic style like the Profane Soul, I had an idea for a subclass that uses spells like an Eldritch Knight. Although this class has a subclass option for being a half caster or full caster, neither option works. Is this a known issue? If so, when will this be fixed?
I think the options you are talking about only effect how frequently they learn new spells. Whether a subclass is a full caster, half caster, or third caster (like blood Hunter) is determined by the base class.
I guessed that's how it must work, but the language they use in the hint "Does this subclass use a full spell casting table (like Wizard), or a half table (like Arcane Trickster)?" and then gives you both options, if it won't work then they should just block the element.

I can only guess that it is a left over unused option from when the dev tools were were turned into homebrew tools.
