Sorry if this was posted, but the search is acting up. I created a Monk/Cleric. The Unarmored Defense trait says: Beginning at 1st level, while you are wearing no armor and not wielding a shield, your AC equals 10 + your Dexterity modifier + your Wisdom modifier. When I add a shield to my character, however, my AC goes up by 2, whereas it should actually go down since I would lose my Wisdom modifier from my AC.
I can confirm on all my Monk characters that equipping a shield doesn't remove the Unarmored Bonus in AC.
When clicking on the AC shield it lists: 10 Armor (None) +3 Dexterity Bonus +2 Unarmored Bonus (Unarmored Defence) +2 Shield (Shield) For a total of 17.
I found something similar with a barbarian where the unarmored bonus plus shield has a higher AC than a piece of armor. When you equip the armor, the character sheet retains the unarmored bonus. If the calculation is treated like natural AC that would that explain it.

AC without shield is 17. With Shield is 19.
I can't click to equip the shield since it's not my character. :)
