It's because it's a weapon with the versatile feature, meaning it can be used with one or two hands. The d6 is for one handed attacks and the d8 for 2 handed. Welcome to 5e, and have fun! =)
The staff "can be wielded as a magic quarterstaff." Quarterstaffs can be wielded one-handed for 1d6+STR damage or two-handed for 1d8+STR damage (this staff also adds 2 to your damage, so I assume your Strength mod is 2). One-handed is assumed to be the default, and if you want to use it two-handed you'll specifically say so, hence why one is written more prominently than the other.
I have a staff of the woodlands and their are 2 damage dice rolls associated with it. 1d6+4 and 1d8+4.
Why 2 and which applies?
or why are there 2 and how do they both apply?
Thanks in advance.
