I think chances of it happening any time soon are exceedingly low, but you could probably homebrew yourself a spell that would function like a smite, including being levelable.
If you add it to the subclasses rather than the core class it considers it to be always prepared like oath spells. This means that your homebrew spell won't appear until you select a subclass at level 3 but does mean you don't have to give up a preparation slot. This is the way that I have done it.

Would it possible to add the paladin smite so that when used it uses up a spell slot, either added in as a scaleable spell or some such

You just click one of the unfilled tick boxes in whatever level spell you want to smite with.

In fairness I’ve done that, annoyingly though you have to give up another spell known to use it, not the end of the world 😀
You could make a feat or item that will grant the spell. Used to be that you could overprepare spells, too, but they did away with that workaround. :/
