But DnD Beyond does not seem to have done this. They want you to use Twitch and Twitch only. Rather than implementing their own private authentication system (email / password), how about just giving us a couple more options? Ie. Google, Microsoft etc?

When Curse started creating D&D Beyond, they didn't just decide to pick Twitch, instead of implementing their own authentication system - Twitch is their own authentication system. Curse are part of Twitch and all of the Curse websites use the Twitch authentication framework.
That said, staff have said they're looking at the possibility of allowing authentication via other systems like Google, Amazon etc.
No idea on the re-authorisation - that should only be needed once. If you changed your Twitch username, that may be why though.
Yes, you can change your D&D Beyond nickname (the name that displays on the forums etc) - this is done by posting in the request thread and a moderator will then grant a name change token.
