I've been trying to compare the Dragonborn versions, but for some reason the Fizban races aren't listed on your Races page. There are only the PHB version available in there. Not sure if it's just an oversight, but it'd be significantly more convenient to not have to scroll through the Fizban sourcebook every time.
Because the Fizban's Treasury of Dragons dragonborn options are dragonborn options, they are listed under the dragonborn section in the races page. This is also true for dracoblood and ravenite dragonborn from Explorer's Guide to Wildemount
Specifically, you can scroll through the entire Dragonborn entry in DDB, or you can click "traits" in the menu, that will take you to the Dragonborn mechanics, as well as giving you a list of the dragonborn in menu if you don't want to scroll from there.
It's how DDB organized other races like elves etc. up until MMM. MMM has made things messy for some races. For instance, for Eladrin, you have the "legacy" Eladrin and the DMG "Variant" Eldrin listed under the Elf race trait menu; but the iteration of Elves does not contain the MMM Eladrin which gets its own race page ... for WotC reasons of innovating classification that I guess DDB can't fully adapt to. Basically, your situation could be more frustrating, so at least your options are all in one place.

I'm resurrecting this old thread. The Fizban's Dragonborn variants are indeed nested within the PHB description of the race. However, I do not understand how I can customize the Fizban variants in the homebrew builder. If I male a copy of the dragonborn race, it seems to me that I only get a copy of the PHB version. Is there a way to make a copy of the Fizban variants (so that they can be easily customized)?

They're variants, meaning you have to select the Create Variant option and then Select An Existing Variant As A Template

If you own or have access to Fizban's, they are hidden inside the PHB Dragonborn section.
