But circle of stars is the same in both the new handbook and Tasha's. It hasn't been changed at all between the two books. It hasn't been revised, just re released.
But also, wizards claims that everything is backwards compatible, but yet, doesn't let you mix and mash 2014 class content with 2024? That doesn't really reflect here in this instance
As has been stated, they're minor, but it is considered updated.
The only class content you're stated to be able to mix and match is un-reprinted subclasses with the new classes. All other character sheet backwards compatibility is just the ability to use old characters with the new rules, and that's what they said from the start.
There's one other backwards compatible thing, and that's the ability to play old adventure modules in the new rules.
Have not purchased anything 2024, in the character creator, I have all options toggled on. Extended rules, legacy and hombrew are all toggled on. When trying to make a new lv 3 paladin, why are my only options devotion, redemption, conquest, crown, and oathbreaker? Where are all of the 2014 subclasses i purchased? Can I seriously not make an oath of vengeance paladin without shelling out another 30 bucks?

You've likely chosen the Core/2024 version of the Paladin class. Go to the Class tab, scroll down, and select the other Paladin option under the Legacy heading.
Maybe saying this here is just screaming into the void, but I can't see why, even though the new PHB has rules for using older subclasses (even those that start at levels lower than 3), I can't use any partnered subclasses with the new classes. I should be able to select an Obojima or Humblewood subclass with a 2024 Druid or Bard, but neither are possible. All the site would need to do for the Druid is give me the level 2 features when I take the subclass at level 3 as the 2024 PHB literally says you can do, and the Bard doesn't even need that consideration, but no. Wizards doesn't even need to collaborate with these 3rd-party creators to update the rules of their content, they could literally just put the option in the dropdown and do the exact same thing they do with their own expanded content.

I've copied all the third-party subclasses that aren't already updated into 2024 via homebrew (easy when you can make a 2014 copy and select the same options, though three of the subclasses from the Grim Hollow Player Pack suck just because they have level-scaled options that adjust every level) and we know that third-party sources CAN adjust for both 2014 and 2024, since both Griffon's Saddlebag and Heliana's are already updated with both versions of the class gaining the subclass from purchase.

Yeah, I guess it is probably that. Hopefully they don't come to the brilliant conclusion that they can make me buy the book again or anything. I assumed that a sourcebook that only made it to Beyond *after* the 2024 PHB would be compatible with it, and I now realize that was optimistic.
They still haven't released the 5.2 SRD, so technically even partnered content can't use 2024 rules.
Don't spread misinformation like that. There's definitely a way for partnered content to use it on D&D Beyond, as we have a few third party sources that included 2024 versions of the subclasses already.

New and updated rules and options replace previous versions. This is in the 2024 PHB.
If the option was updated to 2024 ruleset and you are creating a 2024 character, you must use the 2024 version of that option. If you do not have it available to you, it will not appear and you need to make a 2014 character.
If the option was not updated to 2024 ruleset then you can use it no matter which ruleset you use for the character. The exceptions are 3rd party content, for reasons already provided.

I also looked at druids after seeing that was missing because I'm very familiar with druids and noticed they don't have circle of the moon? One of the best and most used druid sub-classes? I get that Wizards wants to push the new system but I payed for sub-classes with the understanding that I'd have permanent access, not just until they felt like taking it away.

Nothing has been taken away. You probably just selected the 2024 versions of these classes by mistake. If you don't own the 2024 Player's Handbook, then when you choose a 2024 class, you're limited to the one subclass that's available in the Free Rules.
What you need to do is make sure that "2014 Core Rules" is checked on the Home tab of the character builder, then go to the Class tab, remove the class you have selected there, then scroll down to the bottom where the 2014 classes are and select one of those instead.
