When you choose your companion, it only shows it's stat block in the class feature. You can't add it as an extra, thus you don't have a ready made token to add to the virtual tabletop. For all intents and purposes, shouldn't it work similar to the Artificer tiny construct where you can add it as an extra and rename it so you have the ready made token for the board? With only three options I would not think it would be too difficult to make the placeholder tokens that could be re-skinned afterward by players to match whatever creature they've chosen to be their companion.
The problem is that the Extras tab doesn't have any support for dynamic stat blocks — i.e., stat blocks where some of the stats depend on the stats of the creature's owner/summoner, or on the level of the spell slot used to create it. (This doesn't work for Artificer "pet" creatures either, for the same reason.) What you can do is make a homebrew monster with the correct stats and add that to Extras, and then update the homebrew monster whenever the relevant stats change. Annoying, but it works.
I believe they've said that this is the sort of thing that they'll be able to fix properly once the big overhaul of the character builder they're currently working on is done.
