Really frustrated with dndbeyond at the moment. Been a paying member for years and suddenly cannot find a simple eldritch knight subclass to create. I have to jump through multiple hoops for simple things. Shameful.

If I had to guess, you don't own or have shared the 2024 release of the Player's Handbook and you're using the updated Fighter. You need to ensure 5e Core Rules is enabled if you're trying to make a 5e Eldritch Knight and select the Legacy version of the class. If you're after the 5.5e Eldritch Knight, you instead need to ensure you own or have shared to you the Player's Handbook for 5.5e.
Ok lovely. So the system shifted from a year ago and did not let its members notice? As a subscriber I need to jump through undescribed hoops in order to access what i has access to yesterday? That is the very definition of customer service.
I’m looking for a solution but only because something changed without notice. How do I access the eldritch knight subclass at this moment in whatever self serving money grab WOTC has going on at the moment?

-They DID let us know. There was literally a whole release about it. You're just behind, that's nobody's fault but yours.
-It's not "undescribed hoops" here. You just have to make sure your Character Settings are correct. (This is part of media literacy, which is a necessary part of using literally any website.)
-I literally answered how to access it. You still have access to anything you already had. Just follow the instructions.

In the Character Builder, are you looking at the Class tab? There's multiple categories. You should be looking for 5e Core Rules as a category and selecting Fighter from there for the old content.
Leaving short, whiny posts without telling what you even see helps nobody. Hard to help you, hard for you to get help.
When I click on fighter in the 2024 rules it shows up. I can see eldritch knight. But when I click create character and try to create an eldritch knight… the option does not appear. What esoteric algorithm am I not tracking? I tried standing on my head in the corner and reciting the cabal of fire to no avail.
my point is why does it have to be so hard? CAn we not just play?

Nothing has changed other than DDB adding more content management options as more content has released, you just need to select the right option
If you own the 2014 Eldritch Knight you need to make sure you're making a character using the 2014 Fighter Class. In order to see that class option, you need to make sure the 5e Core Rules content toggle is enabled (and if you want to be doubly sure you're accessing the right content, disable the 5.5e Core Rules content toggle). This will give you only the 2014 base classes, including fighter
You can double check by comparing the class icons:

You can also avoid this happening in future by going to My Characters and clicking Settings to the right of the filter. From there you can set your default sources—if you don't own any of the 5.5e books, you'll probably want to disable 5.5e Core Rules and 5.5e Expanded Rules, and enable 5e Core Rules and 5e Expanded Rules.
Again, nothing has been taken away from you, you don't need to pay more, you haven't lost access to anything. It's just as DDB's library continues to grow, more content toggles are added.

I can’t seem to take a screen shot but when I click on subclass i get champion, purple knight, arcane archer, cavalier and rune knight. I’m not doing anything but what I did last time I created a character.

I don't think age has anything to do with it, there's a good chance you and I are within a decade of each other, if not less. Just the next time something seems to be not working, take a breath and read the information in front of you. Or at the very least, don't assume malice on the part of any third party.

If you're looking into the 2024 Fighter and you see the subclass, either you've bought it (in which case you should make sure your Entitlements are in sync) or you have it shared with you (in which case you need to build the character in the Campaign where it's being shared).
