How do the new lineages work when you gain them at higher level? It says, that "If you replace a race with this lineage, you can keep the following elements of that race: any skill proficiencies you gained from it and any climbing, flying, or swimming speed you gained from it."
What does "you can keep" mean? I can keep them and lose the rest? Or, I can keep them, instead of changing it for something else? In case, let´s say Ghostwise Halfling gains this lineage, 1. do they lose "Lucky" and "Silent Speech", or not? 2. does the walking speed, although the size remains the same, increase to 35ft?
You get to choose: either you keep the previous racial skill proficiencies and the movement speeds, or you get two skill proficiencies of your choice. You get the lineage's qualities on top of those things in either case.
Your ex-halfling certainly loses Lucky and Silent Speech, since those are not skill proficiencies, and the walking speed (assuming the character becomes a dhampir) becomes 35ft.
Halflings don't get any racial skill proficiencies or alternate movement speeds, so there's no point in not taking the two skill proficiencies of choice in this case. Lizardfolk on the other hand get two skill proficiencies (out of Animal Handling, Nature, Perception, Stealth and Survival) and a swimming speed. If that's the starting race, you could choose to retain these, or take two other skill proficiencies instead. You can't mix and match - keeping the swimming speed but changing the proficiencies is not an option. And regardless of that choice, you'd get the increased walking speed, darkvision, climb speed and bite.
Thank you for your reply. Losing Silent Speech is a big bummer for my Druid, but over all the benefits outweigh the loss. Also, what about the Spider Climb ability? It says "at 3rd level, you can move up, down, and across vertical surfaces and upside down along ceilings, while leaving your hands free." When I replace my race at higher level, do I automatically get it, or would you say, that I get it after 3 levels of being that lineage?

It refers to character level, irrespective of how many levels you've spent as a dhampir.
