Me and the spousal unit want to play White Plume Mountain together (me as DM, her as player) as a poops-n-giggles kind of game just to have something fun to do.
She would play three PCs. What level should they be? And what classes?

With three PCs, I'd say lvl 9 or 10. Classes, whatever she wants. If it's for poops-n-giggles, don't overthink it - let her play what's fun. If it's three bards, it's three bards. If it's cleric-paladin-wizard, that's great too.
edit: I assume you'll be using the Tales from the Yawning Portal version? If you're converting the 1979 adventure yourself, I think a little bit lower would do for character level.
I'd suggest an Ancestral Guardian Barbarian for tanking, backed up with an Artificer of some kind, and a Druid because they are fantastically useful to have around. They can heal, turn into critters, that crawl, burrow, climb, swim, fly... any mode of movement they like. They can back up the Barbarian as a bear tank, do some fighting as a wolf... Druids are just nifty all the way around. Artificers can do a whole load of things as well. they can have super zappy power armor, guns, knives, chemicals, explosives, moving parts... They're better than the Terminator. Name the Barbarian "Arnold", the Artificer "T-100", and the Druid "Sarah" for added bonus gumby points.
