DnDBeyond is an online digital toolset that is designed to be used in that way. There is no built in function to print except pdfs of character sheets.
I'm sure a simple copy and paste of selected text from the encounter list to a document like Word or Google Documents would do the trick.
I made an encounter with various mob types but I'd like a paper copy to work from while DMing? Can i print that list>?

You can use your browsers print option, but I suspect this won't give you the stat blocks for all the creatures in the encounter.
