I do not understand why they had to take down the existing UA, and couldn't just leave it up until the next sourcebook releases.
I particularly loved the revised Dragonborn and the Way of the Ascendant Dragon Monk, and now they are gone from dnd beyond until that sourcebook releases... Why couldn't it have been kept until release like normal?

Correct. Past Policy was whenever Wizards decided something was officially out of Playtest, they removed it. New policy is "Nope".
Honestly, I'm more for it today than when I made this thread. There have been some good public changes in terms of things being developed for the character sheet and how it works, from rollable hit die to containers, etc. Plus I have to imagine prepping for three books is a lot of work too.
